Strawberry Banana Smoothie

Last week you may have noticed my posts were a little sparse. I was pretty sick for the later half of the week. On Sunday I started to feel much better, so I picked up some fresh fruit and made a smoothie. I thought the orange juice, fresh fruit and soy milk would help give me a boost for work this week. This smoothie was light, smooth and perfect for one. I have one of those blenders that blends smoothies in a single serve cup. It’s fantastic for making breakfast smoothies. I think my favorite part about this recipe is that it only has about 150 calories!

Ingredients

  • 1 cup ice
  • ½ cup orange juice
  • ¼ cup light soy milk, vanilla flavored *
  • ½ banana
  • 6 strawberries
  • ½ teaspoon Truvia, a stevia sugar substitute

Directions

Place all ingredients in blender cup, ice first, then fruit, liquid and Truvia. Blend until smooth.

*Soy milk can be substituted for dairy milk, almond milk or even coconut milk if preferred.
