One of my very best friends moved to Texas this week. Leading up to her departure, we went out to eat constantly! I’m feeling awful from eating poorly the last couple of weeks, so I’ve started a cleanse and made a new commitment to healthy choices. The cleanse I’m doing isn’t anything crazy. Don’t worry, I won’t be drinking only carrot juice for the next three days. However, it’s mainly smoothies made from fresh fruits and vegetables. Today I really needed something crunchy, so I made some Spinach Chips. Spinach is in all of my daily smoothies, so I figured Spinach Chips wouldn’t be cheating! The texture of these chips is really delicate. The flavor is good, but don’t expect the crunch of a potato chip. However, if you’re just looking for something healthy that can satisfy a potato chip craving, I suggest trying these Spinach Chips. You can even change the seasoning if you want to. Ingredients

  • 1 cup fresh spinach
  • 1-2 teaspoons olive oil
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

Preheat oven to 350 degrees. Toss spinach with olive oil until lightly coated. Don’t drench the spinach in olive oil.  Toss the coated spinach with paprika, salt and pepper. Baked on a parchment paper lined cookie sheet for 8-10 minutes or until slightly crispy.
