Fancy Green Beans
Aug 03, 12I’ve been making a big effort to incorporate more green vegetables into every meal. I know you probably thought I already did that. Well, even people who blog about food have their weaknesses. Junk food is mine. Don’t tell anyone. Anyway, when I recently posted about the top Taste Arkansas recipes here, I got inspired to make my mom’s fancy green beans. I never eat these except on Thanksgiving and Christmas. I forgot how awesome they are! They’re even pretty good for you. If you want to cut down on the butter, use olive oil. This weekend, join me in swapping junk for something green.

Ingredients
- 24 oz. package frozen whole green beans
- 1/2 medium onion, chopped
- 1 clove garlic minced
- 1/4 cup almond slivers
- 4 tbsp. butter
- 1/4 cup chicken broth
- salt and pepper to taste
Directions
Sauté onions in butter until just tender, add minced garlic and green beans, pour broth over and cover. Simmer over low heat until green beans are tender, add almonds, and salt and pepper to taste. Continue cooking over low heat just until almonds are warmed through – about 5 minutes – and serve.
